Vegetable Ragu

Ingredients:  

  • 500Kg of carrots (4 or 5 carrots) picture of carrots
  • 1 large onion
  • 1 large courgette or 2 small ones - picture of courgettes
  • 1 can of tomato sauce
  • Salt
  • Italian herbs
  • Olive oil 

Preparation:

  1. Peel and wash the carrots then cut them into very small pieces
  1. Cut the top and bottom off of the courgettes, peel the onions and cut them both into small pieces
  1. Put on a pan with a bit of oil and cook the carrots for around 10 minutes, then add the courgettes
  1. In another small pan, add oil and the onions and cook until they are golden in colour 
  1. Add the onions to the carrots and courgettes then add the tomato sauce, salt and the herbs
  1. Let it cook on a low heat for another 15 minutes 
  1. While the sauce is cooking put some water to boil and cook your favourite pasta
  1. Once it's done, add the sauce to the pasta and a splash of fresh olive oil.
