Caramelised Cherry Tomato Tart


  • 500g of cherry tomatoes
  • 3 spoons of sugar
  • Salt
  • Olive oil
  • 200g of flour
  • 60g of butter
  • Water



Cut the cherry tomatoes in half and put them in a colander with half of a spoon of salt.

In a non-stick frying pan heat two spoons of olive oil, then add the tomatoes and sprinkle them with sugar. Cook it for 10 minutes without moving them too much.

In the meanwhile, if you want to make your own pastry, prepare the dough. Otherwise you can buy it at the supermarket.

Add flour, butter and a pinch of salt in the mixer and activate it at medium velocity. While it is mixing add two spoons of water slowly until the dough is thickened. Roll out the dough subtly.

Put the tomatoes on a baking tray but pay attention to leave the borders empty.

Place the dough carefully on the tomatoes and make small holes with a fork. Put it in the oven for 20 minutes at 180 degrees until it is golden.
